Beef ribs with Argentinean salsa

This refreshing salsa is usually served in Argentina with their much-prized barbecued meats. Here it is used as an accompaniment for meltingly tender steamed beef ribs.

Serves 4 as a starter

900 g (2 lb) beef spareribs, separated into batches of 3 ribs

2 tsp coarse sea salt

2 green chillies, seeded and finely chopped

1 garlic clove, crushed

1 small onion, very finely chopped

1 large tomato, seeded and finely chopped

2 tbsp finely chopped fresh flatleaf parsley

4 tbsp olive oil

1 tbsp red wine vinegar

salt
